Summer Garden Virgin Caipirinha.

A refreshing mocktail that can be made as a batch and served as a punch.

Serves: 6 people

Preparation Time: 20 minutes


Ingredients

Diced lime, lemon and orange

Half a cup of white sugar

Half a cup of water

Star anise

Ginger beer to serve

Fresh mint to garnish

Sugar for garnish

Liquid from can of chick peas

Method

Boil sugar, water, star anise until thick.

Muddle citrus.

Add cooled sugar syrup to the muddled fruit.

Add ice and mix.

Allow to rest for a few minutes.

Pour over crushed ice.

Top with ginger beer.

Whisk the liquid from a can of chickpeas.

Top with a thin layer - this is to mimic the foam from cocktails.

Garnish the glass by brushing side with egg white, rolling in sugar white florals.

Top with mint, lime.
