Fior di Latte Gelato

The most understated yet beloved gelato flavour, Fior di Latte is proof that simplicity can be extraordinary. Creamy, light, and fragrant, it offers a refreshing end to a festive feast – best served with a shot of espresso poured over (affogato style).

Ingredients

415g cream, cold

590g milk

200g sugar

3 tsp vanilla extract (optional)

1/2 tsp xanthan gum

Method

Place the cold cream into a blender.

In a heavy based pot, heat milk, sugar, and vanilla over medium low heat until scalding.

Ensure to mix often. Small bubbles will form around the edge of the pot.

Blend with cold cream for 1 minute. Add xanthan gum, blend for another 2 minutes.

Allow mixture to cool completely before placing it in a fridge overnight to develop flavour.

Pour the gelato into your ice cream machine and churn until soft and creamy.

Keep in the freezer for up to a week in a sealed container.

Tip:

To make stracciatella gelato; allow the gelato to finish churching in the machine. Drizzle melted chocolate while the machine is still on. It will allow the chocolate to harden and mix well into the gelato.
