Fresh Summer Radish Salad

Ingredients
- 1 pkt cos lettuce, shredded
- 250g bocconcini or mozzarella balls
- 80g coppa ham
- 100g fresh peas, blanched
- 80g pickled red onions
- 1 small pkt radishes, thinly sliced
- Fresh fennel for garnish
- Olive oil
Method
- Layer the shredded lettuce in a serving bowl.
- Top with mozzarella, peas, pickled onions, radishes, and coppa ham.
- Scatter fennel leaves generously and drizzle with olive oil before serving.
Serving suggestion:
Serve with crusty bread or as a side to grilled meats or seafood.
